At age 17 & 19 Nestor & Adrian Lasso, full of ambition, took over their parent’s farm with the plan to turn things around drastically. They re-oriented the farm to specialty coffee with an emphasis on varietal and processing experimentation. They teamed up with Jhoan Vergara from Las Flores and Cat from Cata Export and started a journey of trial and error to define the fermentation processes and protocols at the farm. This learning process was time & money consuming but is now paying off in a big way. Nestor has released world class lots that have been used in many barista competitions across Europe. Recently winning 1st place at Brewers Cup in Ireland and 3rd in Austria.
This lot is Nestor’s Bourbon Sidra Honey. Sidra is a fairly new and rare varietal that originated in Ecuador. It’s a crossing of Red Bourbon and Typica and combines characteristics of these two varieties. The sweetness and body of Red Bourbon and the bright acidity of Typica.
The processing of this coffee is quite unique and a testament to Nestor’s stride for innovation. After harvest the coffee is oxidized for 12h at 25°. Then the cherry is put in an airtight tank for 60h of anaerobic fermentation at 18°. Next it’s pulped but the mucilage and cherry leachate is kept with the beans for 32 hours. Finally the coffee is dried for 29 days on a marquee until the coffee reaches a humidity of 11%. This extremely controlled and scientific approach mixed with the intrinsic flavor profile of Sidra creates an incredibly exciting and aromatic coffee. Must try !
How We Brew It
|Ratio||16g coffee for 240g water (1:15)|
|Water||Use soft water (50-100ppm) at 91° C|
Grind 16g of coffee, medium coarse, somewhere between table salt and ground pepper.
||Put the paper filter in your brewer. Rinse the paper filter and discard the water.|
||Add the coffee to the brewer and tap gently on the side to obtain a flat bed of coffee.
||Tare your scale and start the timer. Gently pour 60g of water in slow, circular motions. Preferably use a gooseneck kettle for superior flow control. Allow to bloom.
||At 0:30, slowly add water in circular motions until you hit 120g.|
|Step 6||At 0:50, slowly add more water until you hit 180g.|
|Step 7||At 1:10, slowly add more water until you hit 240g. Complete brewing time should be 2:20.|
|Step 8||If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser.|
We ship every Monday, Wednesday & Thursday with DHL/Bpost. Orders received before 8AM Monday/Wednesday/Thursday will ship that same day. Exceptions can occur.
We aim to deliver fresh but rested coffee that you can dig into right away. Generally the coffee we shipped was roasted in the last 10 days. If you prefer the hyperfresh stuff, let us know in the order notes box on your cart page. Take in account that your order might take longer to ship in this case.

How do I start?
Simple. Login to your account, go to any of our coffees, select the number of bags & grind size. Click “Subscribe” (instead of “one off purchase”) and add to your cart. Repeat this for every coffee you wish to add to your subscription. You can even add some Oatly. Ready? Check out your cart. You’ll get the order shipped to your door every 30 days.
Manage your subscription
Login to your account and navigate to Account > Manage Subscriptions.
- Cancel or skip (part of) your subscription : select one of the products in your subscription. Scroll down and click Cancel/Skip. Repeat this for each subscription product if you want to skip/cancel your entire subscription.
- Add an extra bag : click “Add a product”. Select the coffee you want to add. Now choose if you want to receive the extra product every month or just once. Select the size (KG/250G) and grind size and click “Add a product”.
- Swap a bag (one off) : select the product in your subscription that you want to swap for a month. Scroll down and click “Swap Product”
We strive to always have all of our series stocked. If exceptionally a coffee is not available at the time of your subscription renewal, we will send you the closest alternative.
When you start a subscription, your coffee price is locked in. We revise prices once a year in November. You will receive a notification if the price of the coffees you subscribed to changes.
You can download a PDF invoice for each recurrence of your subscription. Login to your account and navigate to your Account Page.
