Yenny Esperanza is one of 3 siblings in the Samuel Bermudez family. Together with Diego and Daniel, she took a plot of land abandoned by their father and created a new generation farm called Paraiso Villa Esperanza. Here they seek to innovate in the most sustainable way, paying special attention to biodiversity, environmental management water, carbon footprint, etc. Yenny and Diego have produced incredibly high-scoring coffees with an unprecedented level of precision and consistency.
The processing of this coffee is quite unique and a testament to Paraiso’s strive for innovation. Processing starts with 95% of mature 5% underripe cherry. These are floated in water with a high ozone content to lower the microbe quantity. Next the cherry is anaerobic fermented for 48h in a steel tank. Afterwards the cherry is depulped and placed back in the fermentation tank for another 48h. Before moving to drying, the coffee undergoes a thermal shock while washing. This will eliminate any micro organisms present. Next the coffee is dried for 28 hours in a room where a climate system is constantly recirculating air at 34 degrees celsius. This extremely controlled and scientific approach creates a unique and exciting coffee. You’ll want to try this !
How We Brew It
|Device||Hario V60 Dripper|
|Ratio||15g coffee for 250g water (1:16.6)|
|Water||Use soft water (50-100ppm) at 92° C|
Grind 15g of coffee, medium coarse, somewhere between table salt and ground pepper.
||Put the paper filter in your brewer. Rinse the paper filter and discard the water.|
Add the coffee to the brewer and tap gently on the side to obtain a flat bed of coffee. Make a small hole in the coffee bed using the back of a spoon.
||Tare your scale and start the timer. Gently pour 50g of water in slow, circular motions for 10 seconds. Preferably use a gooseneck kettle for superior flow control. Allow to bloom.
||At 0:30, slowly add water in circular motions for 10 seconds until you hit 100g.|
|Step 6||At 0:55, slowly add more water for 10 seconds until you hit 150g.|
|Step 7||At 1:20, slowly add more water for 10 seconds until you hit 200g.|
At 1:45 add the rest of your water for 10seconds. Complete brew time should be around 2minutes 30seconds.
If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser.
We ship every Monday, Wednesday & Thursday with DHL/Bpost. Orders received before 8AM Monday/Wednesday/Thursday will ship that same day. Exceptions can occur.
We aim to deliver fresh but rested coffee that you can dig into right away. Generally the coffee we shipped was roasted in the last 10 days. If you prefer the hyperfresh stuff, let us know in the order notes box on your cart page. Take in account that your order might take longer to ship in this case.

After ordering you will receive an order confirmation email with a link to a PDF invoice. If you're VAT liable, please fill out your VAT number on your cart page before checking out (below the order note box). Other company information can be filled out during checkout under the Billing Address. If you're logged in, you can find invoices for all your past orders on your account page. If you want to change or cancel your subscription, we kindly ask you to do that online. Login to your account, go to the "Account" tab, and click "Manage Subscription".
Let us know what is missing and we will refund you the item. Please provide us with a photo of the package and the content.

How do I start?
Simple. Login to your account, go to any of our coffees, select the number of bags & grind size. Click “Subscribe” (instead of “one off purchase”) and add to your cart. Repeat this for every coffee you wish to add to your subscription. You can even add some Oatly. Ready? Check out your cart. You’ll get the order shipped to your door every 30 days.
Manage your subscription
Login to your account and navigate to Account > Manage Subscriptions.
- Cancel or skip (part of) your subscription : select one of the products in your subscription. Scroll down and click Cancel/Skip. Repeat this for each subscription product if you want to skip/cancel your entire subscription.
- Add an extra bag : click “Add a product”. Select the coffee you want to add. Now choose if you want to receive the extra product every month or just once. Select the size (KG/250G) and grind size and click “Add a product”.
- Swap a bag (one off) : select the product in your subscription that you want to swap for a month. Scroll down and click “Swap Product”
We strive to always have all of our series stocked. If exceptionally a coffee is not available at the time of your subscription renewal, we will send you the closest alternative.
When you start a subscription, your coffee price is locked in. We revise prices once a year in November. You will receive a notification if the price of the coffees you subscribed to changes.
You can download a PDF invoice for each recurrence of your subscription. Login to your account and navigate to your Account Page.
