Nano Challa is a cooperative and washing station established in 2009. This lot we sourced from them is part of a small and carefully curated selection from smallholders in the Genji Chala area. Nano Challa established a reputation for very intense and spiced coffees with unique flavour attributes.
Cherries come from smallholders with less than 3 hectares per farm, mostly from farms located around 2000 meters above sea level. They grow a mix of Ethiopian Heirloom and an improved native varietal called 1274. Farmers use organic compost for fertilization.
The coffee cherries are harvested by family members, then hand-sorted to remove unripes and overripe cherries before they are delivered to the washing station for processing. At the station, a Penagos Eco Pulper removes the skin, pulp and mucilage. Afterwards the cherry is soaked in clean water in concrete tanks for about 3- 10 hours. The coffees undergo a brief fermentation when soaking due to the small amount of mucilage that remain.
The Cooperative Union delivers the dried parchment to a local ECX warehouse where the coffee is graded (from 1-5). After grading the Cooperative Union moves the coffee to their warehouse in Addis Ababa, where the coffee sits in parchment the coffee is contracted and the destination for shipment is confirmed.
