This coffee comes from the Biloya station in Kochere, Yirgacheffe. The station lies at 1720 masl and sources coffee from 300 surrounding farmers. The distinct wet and dry seasons create prime conditions for coffee processing. Yirgacheffe farmers typically intercrop their coffee plants with other food crops. Most farms are also organic-by-default. Farmers in Yirgacheffe typically use very few — if any — fertilizers or pesticides.
Biloya has been focusing on special fermentations in recent years. This season they released an anaerobic, added-yeast and carbonic maceration lot. The latter is a technique coming from winemaking in which the cherry is fermented in a carbon dioxide-rich environment. This alters the kinds of microbes that survive and flourish. Different microbial activity changes the flavor profile. In the case of this lot the coffee has overtly fruity aromatics and a nice cherry booziness that is funky but not too imbalanced. Truly exceptional cup.
How We Brew It
|Ratio||18g coffee for 180g water (1:9)|
|Water||Use soft water (50-100ppm) at 85° C|
Grind 18g of coffee, medium fine, somewhere between sand and ground pepper.
||Put the paper filter in the filter cap. Rinse the paper.|
||Put the cap on the Aeropress chamber and add the coffee.|
||Tare your scale and start the timer. Gently pour 50g of water in slow, circular motions. Preferably use a gooseneck kettle for superior flow control. Allow to bloom.|
||At 0:30, slowly add water in circular motions until you hit 150g. Gently spin the chamber so all grounds submerge and are extracted evenly.|
|Step 6||At 0:50, slowly add more water until you hit 180g.|
Put the plunger on the chamber and let sit until the timer hits 1:30.
Press down the plunger slowly until you reach the coffee bed.
Complete brewing time should be around 2:00.
|Step 8||Bypass (dilute) the brew with 40g more water (220g in total). Mix well & enjoy.

We aim to deliver fresh but rested coffee that you can dig into right away. Generally the coffee we shipped was roasted in the last 10 days. If you prefer the hyperfresh stuff, let us know in the order notes box on your cart page. Take in account that your order might take longer to ship in this case.

How do I start?
Simple. Login to your account, go to any of our coffees, select the number of bags & grind size. Click “Subscribe” (instead of “one off purchase”) and add to your cart. Repeat this for every coffee you wish to add to your subscription. You can even add some Oatly. Ready? Check out your cart. You’ll get the order shipped to your door every 30 days.
Manage your subscription
Login to your account and navigate to Account > Manage Subscriptions.
- Cancel or skip (part of) your subscription : select one of the products in your subscription. Scroll down and click Cancel/Skip. Repeat this for each subscription product if you want to skip/cancel your entire subscription.
- Add an extra bag : click “Add a product”. Select the coffee you want to add. Now choose if you want to receive the extra product every month or just once. Select the size (KG/250G) and grind size and click “Add a product”.
- Swap a bag (one off) : select the product in your subscription that you want to swap for a month. Scroll down and click “Swap Product”
We strive to always have all of our series stocked. If exceptionally a coffee is not available at the time of your subscription renewal, we will send you the closest alternative.
When you start a subscription, your coffee price is locked in. We revise prices once a year in November. You will receive a notification if the price of the coffees you subscribed to changes.
