Sebastian Ramirez is the fourth generation of his family to grow coffee at El Placer in Huila. Growing up on the farm gave him a deep understanding of what the land can produce and what it takes to keep standards high. His focus is on doing fewer things better. That means careful cherry selection, clean processing and a slow approach to drying that does not rush the coffee. Sebastian is also involved in the wider farming community in Huila and sees collaboration with neighbouring producers as part of how the region improves collectively. We selected Sebastian's Maragesha because it was clean, precise and distinctly floral. Those qualities come through reliably from one harvest to the next, which tells us a lot about how the farm is managed.

El Placer sits at 2100 masl in Huila, where cool air and altitude give the Maragesha variety time to develop fully.

El Placer is located in Huila, one of Colombia's most recognised coffee regions, at 2100 masl. At that altitude, temperatures stay cool and the growing season is long, which allows the Maragesha variety to ripen slowly and evenly. Maragesha is known for its large bean size and its potential to produce delicate, aromatic cups when grown and processed well. Sebastian uses a washed process throughout. Cherries are pulped carefully to preserve the coffee's natural character, then washed thoroughly to remove any remaining mucilage. The parchment is dried slowly on raised beds with regular turning until it reaches the right moisture level. This unhurried approach to drying is central to how the farm achieves such a clean and floral result year after year.
