Finca Las Flores was founded by Edilberto Vergara and Nubia Ayure more than three decades ago, beginning with 16 hectares of coffee in Huila. Following Nubia’s passing in 2012, their sons Jhoan and Diego carried the family’s work forward with a new focus on quality and innovation. While Diego oversees production and drying, Jhoan pushes experimentation with fermentation and processing, raising the farm’s reputation as a leader in specialty coffee. We began working with Jhoan because of his dedication to precision and his willingness to explore new approaches to decaf, ensuring coffees that stand out for their clarity and character. His work is a continuation of his family’s vision: to build on deep-rooted tradition while embracing forward-looking techniques that bring out the best of the farm’s varieties.

Shaded by native and fruit trees, Las Flores’ high-altitude environment nurtures slow cherry growth and remarkable flavour expression.

Las Flores sits at 1750 masl in Huila, a region famed for its rich volcanic soils, cool nights and stable rainfall. These conditions, combined with the farm’s shade trees, allow the coffee cherries to ripen gradually, concentrating sweetness and complexity. The Vergara family cultivates a wide range of varieties, including Pink Bourbon, Tabi, Gesha, Java, and Maracaturra, each processed with care. Their advanced methods include multi-stage anaerobic fermentations, thermal shock techniques and careful drying. Such approaches ensure consistency and distinction while preserving a strong link to the farm’s natural environment. Beyond the technical side, Jhoan and Diego also play an important role in the community by maintaining local employment and sharing knowledge on quality production. Las Flores continues to stand as a benchmark for Huila coffee, where family tradition and innovation meet.
