Finca Los Aguacatones is one of 5 farms owned by the Morales family in Huehuetenango. The family’s coffee operation started in 1963 at Finca Rosma. Today Alejandro and Fredy are the third generation to lead the family business. They are our main partner for microlot sourcing in Guatemala. Los Aguacatones lies high in the Sierra de los Cuchumatanes. Warm winds blowing from the Mexican plains make the climate just right for a slow coffee cherry maturation. Slow fruit ripening means more sugars and organic acids and hence a more complex cup profile. The family had initially intended this 4ha plot to be an avocado farm, but a destructive fire in 2009 led them to refocus on coffee. The soil was enriched and a deep water well, rainwater collection tank and wet mill was built. Later the family’s dry mill was built on the same site.

High in the Cuchumatanes mountains, the Bourbon cherries benefit from a slow ripening cycle, packing them with rich sugars and organic acids.

A complex, fruity and juicy coffee from our friend Alejandro Morales at Finca Los Aguacatones. Alejandro produces award-winning coffees in the Sierra de los Cuchumatanes of Huehuetenango, Guatemala. We’ve been closely working with the Morales family since 2025.

Los Aguacatones is a mixed plot of Bourbon Type varieties. This includes Typica, Bourbon, Catuai and Villa Sarchi. Part of the cherries are processed in an experimental natural. This is not so common for Guatemala where 98% of coffees are washed. After picking, the cherry is rinsed to remove any impurities. Then it’s rested for 48h in an open tank (aerobic). Afterwards the cherries are dried, first in the sun on African beds (5-8 days), then in a greenhouse where they can dry slower and more controlled. This combination of traditional high quality varieties with a short fermentation and very controlled drying, gives a complex profile of red fruits and florals. In 2025 they built a dry mill on site to have better control over the milling of their coffee. They also built a cupping lab overseeing the drying beds. The finca was a National Winner at the Cup of Excellence in 2017 and 2026.
