World Class Coffee. Incredibly complex. Very strong florals.
|Taste Notes||Violet, Elderflower, Flambéed Banana, Cuberdon|
We've released many excellent Ethiopian coffees in our history, but this is our all-time favorite. It's an exclusive lot from the Sewda Natural Coffee Processing Wet Mill, located in the region of Oromia, Guji. The station buys cherry from 600 neighboring farmers. The cherry quality coupled with the slow, controlled anaerobic processing, create a complex, balanced, intensely floral and sweet cup, scoring a whopping 91 points.
The cherries are immersed and floated upon arrival. Next they are closed air-tight and in a fully sealed and controlled fermentation tank for 7 days until the pH level drops to 3.8 which gives the desired profile of winey, dry fruit, juicy, fruity flavors, and rich florals. The fermentation tank itself sits in a concrete water bath to maintain a constant temperature between 15 and 18 degrees Celsius. All of this keeps the fermentation slow and controlled leading to a complex and balanced cup. Drying happens in 2 stages. A quick drying that drops the humidity to 35% followed by a traditional 30 days drying under a shade net on African beds.
How We Brew It
|Device||Hario V60 Dripper|
|Ratio||13g coffee for 220g water (1:17)|
|Water||Use soft water (50-100ppm) at 86° C|
Grind 12g of coffee, medium coarse, somewhere between table salt and ground pepper.
||Put the paper filter in your brewer. Rinse the paper filter and discard the water.|
Add the coffee to the brewer and tap gently on the side to obtain a flat bed of coffee.
||Tare your scale and start the timer. Gently pour 60g of water in slow, circular motions for 10 seconds. Preferably use a gooseneck kettle for superior flow control. Allow to bloom.
||At 0:30, slowly add water in circular motions until you hit 120g.|
|Step 6||At 0:50, slowly add more water until you hit 180g.|
|Step 7||At 1:10, add the rest of the water.
Total brew time should be around 2:15.
If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser.
