Thirty-eight families in the mountains of Inkawasi share the work of growing and harvesting this coffee together.

The Pacaybamba Collective is made up of thirty-eight families farming in the Inkawasi mountains of Cusco, Peru. Their plots sit between 1,800 and 2,000 masl, where cool temperatures and high altitude slow the cherry development and build sweetness in the fruit. Harvesting is done by hand and collectively, guided by values of reciprocal work inherited from Andean tradition. Ripe cherries are naturally processed using controlled fermentation in grain-pro bags, then dried at altitude for consistency. The result is a sweet and fruity cup with notes of raspberry, cherry and milk chocolate.

Method : V60

Water : Soft water (80ppm) at 93° C

Coffee : 15g

Water : 260g

Pours : Start with 50g. Second pour at 00:30 (100g). Third pour at 01:00 (rest). 15 sec for each pour.

When will my order be shipped?

We ship every weekday with DHL Parcel (EU) and DHL Express (worldwide). Orders received before 7AM ship the same day. The shipping time varies per destination.

Can I get an invoice?

Due to the introduction of the PEPPOL invoicing system in Belgium, we can currently only provide an invoice upon request by email. Send your order number together with your invoice information (Company, VAT, address) to hello@wideawake.coffee. We are working on an automated digital solution.

For EU clients that require an invoice with auto-transferred VAT, email us at hello@wideawake.coffee before ordering (Company, VAT, address). We will verify your VAT number within 3 working days.

How fresh is the coffee I receive?

The coffee we ship is usually roasted no longer than a week ago, but can be up to 2 weeks maximum. We recommend to rest our coffees 2-4 weeks after roasting as they gain more intensity and complexity.

What to know about subscriptions?

Our subscriptions are flexible. You can change or cancel at any time. Log into your account, go to the Account tab and choose Manage my subscription

Throughout the year, we release different microlots on our series. Your subscription price will automatically adapt to the new release. As a subscriber you always benefit from a 5% discount.

What to know when ordering ground coffee?

After roasting we pack and seal our coffee bags immediately. When you order ground coffee, be aware that the bag will be opened, so our team can grind your coffee. Pay attention when choosing your grind size as we do not accept returns for wrong grind size selection.
