This coffee is produced by smallholders of the Inga community, descendants of the ancient, pre-hispanic Incas. During the western conquest of Colombia, they remained isolated high in the mountains which became their natural refuge. In the 1990’s, the mountains were controlled by guerrilla groups, drug traffickers, and paramilitaries and the Inga’s were forcibly involved in poppy and heroin production. In the last decade the mountains have become a safe zone for the Inga tribe. The illegal crops were eradicated and dozens of smallholders started growing Caturra coffee trees.
The Inga grow their Caturra crops in the Resguardo Inga Aponte, at an average of 2150 masl. This elevation, combined with the Galeras Volcano constantly shedding nutrient-rich ash, makes for an exceptionally complex and sweet coffee. Producers process coffee on their own properties. They depulp the cherry and dry it as a honey on stacked raised beds.
How We Brew It

|Water||Use soft water (50-100ppm) at 95° C|
Grind 16g of coffee, medium coarse, somewhere between ground pepper and table salt.
||Put the paper filter in your brewer. Rinse the paper filter and discard the water.|
||Add the coffee to the brewer and tap gently on the side to obtain a flat bed of coffee.
||Tare your scale and start the timer. Gently pour 50g of water in slow, circular motions.
||At 0:30, slowly add water up to 120g.|
|Step 6||At 0:50, slowly add water up to 190g.|
|Step 8||If the coffee runs too fast, grind finer. If the coffee runs too slow, grind coarser.|

Roasting & Freshness
We aim to deliver fresh but rested coffee you can dig into right away. That means most coffee we ship is 2-10 days old. If you prefer the hyperfresh stuff, let us know in the order notes box on your cart page. Our coffees taste best 1-6 weeks after roasting but can be enjoyed for up to 3 months or more if vacuum packed and/or freezed.
We currently only ship within the EU. Shipping costs and the thresholds for free shipping are determined per country.
