The Producer
This outstanding coffee comes from the Danche station located in Chelbesa, Gedeo. The station is supplied by 400 smallholder producers. In this area, farmers grow Welisho & Kurume varietals in semi-forest vegetation. They have passed knowledge over generations and hence have very good practices. They allow the cherry to ripen well before they harvest, knowing that this allows for more sweetness. Although the typical size of each farm is only 1-2 hectares, their yields are good thanks to the fertile red soil.
Processing
Danche station manager Firew Ayalew oversees a very meticulous quality grading process. When the cherry arrives, it is pulped by a traditional Agaarde Dispulper. Skin and fruit pulp are removed before the machine grades the parchment in water as 1st or 2nd quality, determined by density. The selected cherry is then wet fermentated for 72 hours. Next the coffee is washed in channels and graded in water by density. The lower density (lower quality) will float and is removed, leaving only the denser and therefore higher quality beans which are separated as higher grade lots. After a 2h soaking, the coffee is piled up in layers of 2cm and dried over 10 days. Afterwards the cherry is hand sorted for 2-4 hours.

Step 1 |
Grind 18g of coffee, medium coarse, somewhere between sand and ground pepper. |
Step 2 |
Put the paper filter in the filter cap. Rinse the paper. |
Step 3 |
Put the cap on the Aeropress chamber and add the coffee. |
Step 4 |
Tare your scale and start the timer. Gently pour 50g of water in slow, circular motions. Preferably use a gooseneck kettle for superior flow control. Allow to bloom. |
Step 5 |
At 0:30, slowly add water in circular motions until you hit 150g. Gently spin the chamber so all grounds submerge and are extracted evenly. |
Step 6 | At 0:50, slowly add more water until you hit 200g. |
Step 7 |
Put the plunger on the chamber and let sit until the timer hits 1:30. |
Delivery
We ship every Monday, Wednesday & Thursday with DHL/Bpost. Orders received before 8AM Monday/Wednesday/Thursday will ship that same day. Exceptions can occur.
Freshness
We aim to deliver fresh but rested coffee that you can dig into right away. Generally the coffee we shipped was roasted in the last 10 days. If you prefer the hyperfresh stuff, let us know in the order notes box on your cart page. Take in account that your order might take longer to ship in this case.

How do I start?
Simple. Login to your account, go to any of our coffees, select the number of bags & grind size. Click “Subscribe” (instead of “one off purchase”) and add to your cart. Repeat this for every coffee you wish to add to your subscription. You can even add some Oatly. Ready? Check out your cart. You’ll get the order shipped to your door every 30 days.
Manage your subscription
Login to your account and navigate to Account > Manage Subscriptions.
- Cancel or skip (part of) your subscription : select one of the products in your subscription. Scroll down and click Cancel/Skip. Repeat this for each subscription product if you want to skip/cancel your entire subscription.
- Add an extra bag : click “Add a product”. Select the coffee you want to add. Now choose if you want to receive the extra product every month or just once. Select the size (KG/250G) and grind size and click “Add a product”.
- Swap a bag (one off) : select the product in your subscription that you want to swap for a month. Scroll down and click “Swap Product”
Availability
We strive to always have all of our series stocked. If exceptionally a coffee is not available at the time of your subscription renewal, we will send you the closest alternative.
Pricing
When you start a subscription, your coffee price is locked in. We revise prices once a year in November. You will receive a notification if the price of the coffees you subscribed to changes.

You can download a PDF invoice for each recurrence of your subscription. Login to your account and navigate to your Account Page.
